Ingredients
  

  • 1 lb sausage chicken or pork
  • 2 cups potatoes yukon gold or russet, quartered and cut thin
  • 1 large red bell pepper cut into 1 inch pieces
  • 1 large orange bell pepper cut into 1 inch pieces
  • ½ large red onion cut into 1 inch pieces
  • 1 medium zucchini cut into 1 inch half moon shapes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions
 

  • Slice the sausage into ½” rounds and quarter the potatoes into pieces no larger than ½" thick.
  • In a large mixing bowl, add all of the ingredients and toss to combine.
  • Dump the entire contents of the mixing bowl into the air fryer basket and cook at 375 F for 13 to 16 minutes, tossing halfway through the cooking time.
  • Serve with a side of white or brown rice.

Notes

I suggest buying a good quality sausage when possible. Make sure to cut the vegetables into similar-sized pieces for even cooking. Tossing halfway will help them get crispy on all sides. You can prepare ingredients ahead of time and refrigerate. Ensure sausage reaches 160F internal temperature.
