Ingredients
  

  • 1 medium ripe avocado pitted and diced
  • 3 tablespoons light mayo
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons minced red onion optional
  • ½ teaspoon garlic powder optional
  • 2 cups cubed or shredded cooked chicken
  • Salt to taste
  • Pepper to taste
  • 8-10 leaves butter lettuce
  • minced red pepper for garnish optional
  • carrot for garnish optional

Instructions
 

  • In a medium bowl, mash avocado with mayo and lemon juice. Stir in basil, onion, garlic powder, and chicken cubes until combined. Season chicken salad with salt and pepper to taste.
  • Fill butter lettuce leaves with chicken salad and top with minced red pepper and carrot if desired. Serve immediately. Enjoy!

Notes

You can top the lettuce wraps with a variety of optional ingredients like minced fresh herbs, thinly sliced radishes, shelled, roasted sunflower seeds, sprouts, etc.
