Ingredients
  

  • 1.5 lbs Cod Fillets about 4 thick fillets
  • 2 tablespoon Olive Oil or Coconut Oil
  • Salt & Freshly Ground Black Pepper
  • 4 cloves Garlic minced
  • 1 can (13.5 oz) Full-Fat Coconut Milk
  • 1 large Lemon for both zest and juice
  • 1 big handful Fresh Parsley chopped

Preparation Steps

  • Preheat the oven to 400°F (200°C). Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
  • Heat the oil in an oven-safe skillet over medium-high heat. Add the cod fillets and sear for 2-3 minutes without touching.
  • Flip the cod, add garlic, and stir for about a minute. Pour in the coconut milk and lemon zest, stirring to combine.
  • Turn off the burner, spoon sauce over the cod, and transfer the pan to the oven. Bake for 10-15 minutes until the fish is cooked through.
  • Remove from the oven, squeeze fresh lemon juice over the fish, sprinkle with parsley, and serve.

Notes

If you don't have cod, halibut or haddock work great too. Use full-fat coconut milk for creaminess. Patting the fish dry is key for a golden exterior.
