Ingredients
  

Banana Filling

  • 2 tablespoon Butter
  • 0.5 Cup Brown Sugar
  • 0.5 teaspoon Cinnamon
  • 2 tablespoon Maple Syrup optional
  • 6 Bananas ripe

Topping

  • 0.25 Cup Butter cold
  • 0.5 Cup Brown Sugar
  • 0.75 Cup Gluten Free Flour Mix 1 to 1 (Bob's Red Mill)
  • 0.75 Cup Pecans chopped

Preparation

  • Preheat your oven to 350 F. Make the filling first. Start by melting 2 tablespoon of butter in a frying pan over medium low heat. Once melted, add the brown sugar. Mix until combined, then stir in the cinnamon. Let simmer for 1 - 2 minutes stirring continually. Add the maple syrup and stir until combined. Turn off the heat.
  • Peel and chop up the bananas into 1 " pieces. Then add them to the pan with the butter and brown sugar. Gently mix until all of the banana pieces well are coated. Spread the coated banana evenly into an 8"x8" baking dish.
  • Make the topping. In a mixing bowl add the cold butter, the brown sugar and the gluten free flour. Use your hands to squish the butter into the flour and sugar. Mix until fully combined. Add the pecans and mix until they're fully mixed in.
  • Cover the bananas with the topping and spread out until the top is fully covered. Bake for 24 - 25 minutes. Serve with vanilla ice cream.

Notes

Gluten Free oats can be added to this recipe if desired. If you're not on a gluten free diet you can add regular oats. Add ½ Cup - ¾ of a Cup along with the pecans. The pecans can be swapped out for walnuts, almonds or peanuts, if preferred. I use Bob Red Mill 1 to 1 gluten free flour mix for the banana crumble topping. Use your favourite gf flour mix or just plain rice flour if preferred. If you're not on a gluten free diet, you can use regular wheat flour in place of the gf flour. Use the same measurement. Make this recipe vegan by using vegan butter or margarine in place of the butter.
