Salad Ingredients
- 6 cups arugula leaves 5 oz.
- 3 small beets cooked, roasted, or quick pickled; in small cubes or slices
- ½ cup pecan halves toasted
- ½ cup goat cheese crumbles
- 1 tablespoon Everything Bagel Seasoning see post for alternatives
Creamy Balsamic Dressing
- 2 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard or brown mustard
- 1 tablespoon plain Greek yogurt or mayonnaise
- ½ tablespoon maple syrup or honey; optional
- ¼ cup extra virgin olive oil
Preparation
Toast your pecan halves in a dry skillet on medium-low heat until fragrant and lightly browned, tossing frequently to prevent burning.
In a small glass jar, combine balsamic vinegar, Dijon mustard, Greek yogurt, maple syrup, and olive oil. Close the jar and shake vigorously until well combined.
In a large bowl, toss arugula leaves with the creamy balsamic dressing. Top with beets, pecan halves, goat cheese crumbles, and Everything Bagel Seasoning.
Optionally, divide dressed arugula into 4 plates and top with equal portions of the remaining ingredients for presentation.
Serve and consume shortly after assembling.
