Salad Ingredients

  • 6 cups arugula leaves 5 oz.
  • 3 small beets cooked, roasted, or quick pickled; in small cubes or slices
  • ½ cup pecan halves toasted
  • ½ cup goat cheese crumbles
  • 1 tablespoon Everything Bagel Seasoning see post for alternatives

Creamy Balsamic Dressing

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard or brown mustard
  • 1 tablespoon plain Greek yogurt or mayonnaise
  • ½ tablespoon maple syrup or honey; optional
  • ¼ cup extra virgin olive oil

Instructions
 

Preparation

  • Toast your pecan halves in a dry skillet on medium-low heat until fragrant and lightly browned, tossing frequently to prevent burning.
  • In a small glass jar, combine balsamic vinegar, Dijon mustard, Greek yogurt, maple syrup, and olive oil. Close the jar and shake vigorously until well combined.
  • In a large bowl, toss arugula leaves with the creamy balsamic dressing. Top with beets, pecan halves, goat cheese crumbles, and Everything Bagel Seasoning.
  • Optionally, divide dressed arugula into 4 plates and top with equal portions of the remaining ingredients for presentation.
  • Serve and consume shortly after assembling.
