Ingredients
  

Meat and Dairy

  • 1 lb Flank Steak 1 to 1.25 lb preferred
  • cup grated Parmesan
  • cup grated Provolone
  • 2 tablespoons Butter

Seasonings and Herbs

  • Salt
  • Pepper
  • 2 tablespoons finely chopped Italian Parsley
  • 2 cloves pressed or finely chopped garlic

Other Ingredients

  • cup Italian Breadcrumbs
  • 1 cup White Wine
  • 3 cups Tomato Sauce
  • Butchers Twine for tying the braciole

Instructions
 

Cooking Steps

  • Heat your oven to 300 degrees.
  • Pound the flank steak to make it thinner, dust both sides with salt and pepper.
  • Mix Parmesan, Provolone, breadcrumbs, parsley, and garlic in a bowl, then spread on top of the flank steak.
  • Roll up the steak and tie it closed with butcher's twine.
  • Melt butter in a Dutch oven, brown the steak on all sides for about 8 minutes.
  • Add white wine, bring to a bubble, then pour tomato sauce over steak, cover, and place in the oven.
  • Roast at 300 degrees for 1.5 hours, basting every 30 minutes.
  • After 90 minutes, let the braciole rest for 10 minutes before slicing, removing butcher's twine.
  • Serve immediately with some tomato sauce spooned on top.
