Ingredients
  

Potatoes

  • 2 pounds large russet potatoes about 4

Seasonings

  • 1.5 teaspoons kosher salt plus more as needed
  • 1.5 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 0.75 teaspoon dried thyme
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon freshly ground black pepper

Frying

  • 2 quarts canola or vegetable oil for deep frying
  • 3 tablespoons vegetable or canola oil if baking
  • cooking spray if baking
  • 1 tablespoon finely chopped fresh parsley leaves for garnish (optional)

Serving Condiments

  • remoulade for serving
  • fry sauce for serving
  • ketchup for serving

Instructions
 

Preparation

  • Peel and cut the potatoes into ¼-inch-thick planks, then cut them into ¼-inch-thick sticks.
  • Soak the fries in ice water for at least 30 minutes or up to 12 hours.
  • Drain and rinse the fries, then pat dry.
  • Mix together the salt and spices in a small bowl.

Deep Frying

  • Heat oil to 260ºF in a large pot. Fry the fries for about 3 minutes until slightly softened.
  • Increase the heat to 350ºF and fry until golden-brown and crispy, about 2 to 4 minutes.
  • Toss the fries with the spice blend and season with more salt if needed. Garnish and serve.

Baking

  • Preheat the oven to 425ºF and coat baking sheets with cooking spray.
  • Toss the fries in oil and seasonings, then arrange them on the baking sheets.
  • Bake for 20 minutes, flip, and bake for an additional 10 to 15 minutes until golden-brown. Garnish and serve.

Notes

Serve warm with desired condiments for dipping.
