Ingredients
  

Vegetables

  • 4 cups diced potatoes
  • ½ cup chopped onion
  • 2 cloves garlic minced

Liquids

  • 4 cups vegetable broth
  • ½ cup heavy cream

Cheese

  • 1 cup shredded cheddar cheese

Oils and Seasonings

  • 2 tablespoons olive oil
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add the chopped onions and garlic and sauté until they are translucent.
  • Add the diced potatoes, vegetable broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  • Once the potatoes are cooked, use an immersion blender to puree the soup until smooth.
  • Stir in the heavy cream and shredded cheddar cheese until melted and combined.
  • Serve warm, garnished with additional cheddar and herbs if desired.

Notes

This soup can be made ahead of time and reheats well. For a thicker soup, you can add more potatoes or reduce the amount of broth.
