Ingredients
  

  • 2.5 lbs Yukon Gold potatoes peeled and cubed
  • 4 tablespoons unsalted butter or 3 tablespoons butter + 1 tablespoon olive oil
  • 1 large yellow onion finely chopped (about 1.5 cups)
  • 5-6 cloves garlic minced (about 2 tablespoons)
  • ¼ cup all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth (32 fl oz)
  • 2 cups whole milk or half-and-half (16 fl oz)
  • ½ cup heavy cream (optional, 4 fl oz)
  • 2 cups sharp cheddar cheese freshly shredded (8 oz)
  • 1 tablespoon fresh parsley finely chopped
  • 1 tablespoon fresh chives finely chopped
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
  • 1 teaspoon salt (to taste)
  • ½ teaspoon freshly ground black pepper (to taste)
  • cayenne pepper or smoked paprika (optional)

Instructions
 

  • Peel and cube Yukon Gold potatoes into 1-inch pieces. Finely chop onion and mince garlic.
  • In a large pot or Dutch oven, melt butter over medium heat. Add chopped onion and cook 4-5 minutes until softened. Stir in garlic and cook 30 seconds until fragrant.
  • Sprinkle flour over the mixture and whisk constantly for 2-3 minutes to form a golden roux.
  • Slowly add chicken broth while whisking to prevent lumps. Add potatoes, bring to a boil, then reduce heat and simmer 15-20 minutes until tender.
  • Use an immersion blender to partially blend the soup, leaving some chunks for texture. Stir in milk, heavy cream, and shredded cheddar until smooth.
  • Remove from heat and fold in parsley, chives, and thyme. Season with salt, pepper, and a pinch of cayenne or paprika if desired.
  • Serve hot with extra cheese or herbs on top if desired.

Notes

For extra flavor, garnish with crispy bacon bits, additional cheddar, or fresh chives. This soup thickens as it cools—add a splash of broth or milk when reheating.
