Ingredients
  

Dressing

  • 2 tablespoons maple syrup or honey
  • 1 teaspoon lemon zest
  • 0.25 cup lemon juice freshly squeezed or lime juice
  • 0.5 teaspoon vanilla extract
  • 0.25 teaspoon ground cinnamon
  • a pinch nutmeg

Fruit Salad

  • 1.5 cups green apple peeled, cored and cut into ½ -inch cubes
  • 1.5 cups red apple peeled, cored and cut into ½ -inch cubes
  • 1.5 cups pear peeled, cored and cut into ½ -inch cubes
  • 1 cup kiwis peeled, quartered, and cut into ½- inch cubes
  • 1 cup green grapes cut in half
  • 1 cup pomegranate arils
  • 6 ounces raspberries

Optional Garnish

  • sprigs of mint optional topping

Instructions
 

Dressing Preparation

  • In a large salad bowl, whisk together the maple syrup, lemon juice, lemon zest, vanilla extract, cinnamon and nutmeg.

Salad Preparation

  • Add the apple, pear, orange segments, kiwis, grapes and pomegranate arils. Toss to coat thoroughly. Chill for at least an hour or up to 6 hours in the refrigerator.
  • Right before serving, top it off with raspberries and garnish with fresh mint leaves, if using. Serve.

Notes

This recipe makes approximately 8 cups of fruit salad, ideal for 8 servings. Prepare the dressing in advance. Store leftovers in an airtight container for up to 3 days.
