Ingredients
  

  • 1 tablespoon olive oil
  • 2 medium onions, chopped
  • 2 cloves garlic, minced
  • 0.5 teaspoon cinnamon
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon coriander
  • 3 cups water
  • 0.25 teaspoon salt plus more as needed
  • 2 cups whole wheat couscous
  • 1 sprig parsley
  • 0.33 cup dried apricots, chopped
  • 0.33 cup dried pitted prunes, chopped
  • 0.33 cup almonds, chopped and toasted
  • 0.25 cup Italian parsley, chopped
  • Freshly ground pepper to taste

Instructions
 

  • Heat oil in a stockpot over medium heat. Add onions and garlic until softened, about 5-8 minutes. Add cinnamon, ground ginger, and coriander. Cook, stirring for 1 minute.
  • Add 3 cups of water and salt and bring to a boil. Turn off the heat, and stir in the couscous. Top with a parsley sprig, cover and let sit for 5 minutes.
  • Stir the apricots, prunes, almonds, chopped parsley and pepper into the cooked couscous. Adjust seasonings. Serve warm.

Notes

This couscous stuffing pairs well with Moroccan-Style Baked Chicken.
