Equipment

  • Dutch oven
  • Silicone spatula
  • parchment paper
  • Meat Thermometer

Ingredients

  • 1.5 cups warm water about 100 degrees F
  • 1 packet yeast active dry, instant, or quick rise- 2.25 teaspoons
  • 1.5 teaspoons fine grain salt preferably NOT iodized
  • 3.25 cups all-purpose flour or bread flour, plus more for dusting

Instructions

  • In a large bowl, mix together the warm water, yeast, and fine grain salt until fully or almost dissolved.
  • Add the flour all at once and stir until a sticky dough forms.
  • Cover with a kitchen towel and let it rise in a warm place for 2-3 hours.
  • Preheat your oven to 450 degrees F 30 minutes to an hour before baking.
  • Scrape the dough onto flour-dusted parchment paper, shaping it into a loaf.
  • Use the parchment to flip the loaf over, floured side up.
  • Cut slits across the top of the loaf if desired.
  • Carefully remove the lid of the preheated Dutch oven and place the loaf inside.
  • Cover the Dutch oven and bake for 35 minutes at 450 degrees F (40 minutes if dough was cold from the fridge).
  • Remove the lid and bake for another 5-10 minutes until golden brown.
  • Remove the loaf and cool on a wire rack for at least 10 minutes before slicing.

Notes

Dough can be stored in the fridge for easier handling and enhanced flavor. Use a nice parchment paper to prevent sticking and bake with adjustments if using cold dough from the fridge.
