Ingredients
  

Base Ingredients

  • 1 small onion finely diced
  • 2 cloves garlic crushed
  • 300 g cooked chicken
  • 2 slices smoked back bacon or streaky, or lean back bacon
  • ½ teaspoon garlic powder granules
  • ½ teaspoon onion powder granules
  • ½ teaspoon dried dill
  • ½ teaspoon dried parsley
  • 1 tablespoon lemon juice
  • 100 g light cream cheese i.e. Philadelphia or store brand
  • 240 ml chicken stock
  • 250 ml semi skimmed milk
  • 250 g uncooked penne pasta
  • 30 g parmesan or mature cheddar
  • 1 spray spray oil
  • to taste salt
  • to taste black pepper

Cooking Instructions

  • Spray a large frying pan with cooking oil spray.
  • Add the bacon and cook until golden, remove and set aside.
  • Spray again with spray oil and add the onion and garlic and fry until soften and lightly golden.
  • Add in the garlic powder, onion powder, dried dill, dried parsley, lemon juice, cream cheese, milk and stock; bubble on high heat until creamy.
  • Cook the pasta according to package directions; reserve ⅓ cup (80ml) pasta water and drain the rest.
  • Add parmesan or cheddar to the sauce, stir until melted, add cooked chicken; bubble until sauce thickens.
  • Stir in the pasta, bacon, and reserved pasta water; mix until combined.
  • Season with salt and black pepper as needed.
  • Sprinkle with fresh parsley (optional).
