Ingredients
  

Dressing

  • 2 tablespoon extra virgin olive oil
  • 2 tablespoon lemon juice
  • ¼ teaspoon caster sugar

Salad Ingredients

  • 1 Lebanese cucumber peeled into ribbons
  • 1 bunch radishes trimmed, thinly sliced
  • 1 small fennel thinly sliced
  • 1 head oakleaf combo lettuce leaves torn
  • 2 tablespoon chopped fresh mint leaves
  • 2 tablespoon chopped fresh flat-leaf parsley leaves

Instructions
 

Preparation

  • Place oil, lemon juice and sugar in a large bowl. Stir until sugar has dissolved. Season with salt and pepper. Add cucumber, radish and fennel. Toss to combine. Set aside for 5 minutes.
  • Add lettuce to mixture. Toss to combine. Sprinkle with mint and parsley. Serve.

Notes

This salad is gluten-free and can be prepared quickly for a refreshing side dish.
