French-Style Potato and Green Bean Salad

Ingredients
  

Vegetables

  • 1 lb haricot verts (thin green beans)
  • 1 lb small yellow potatoes
  • 1 bay leaf
  • 1 cup DLM Dijon Vinaigrette
  • handful fresh herbs (chives, parsley, basil)

Seasoning

  • Salt to taste
  • Pepper to taste

Instructions
 

Preparation

  • In a large pot of boiling salted water, blanch the green beans until just crisp. Remove with a slotted spoon and immediately plunge into cold water to cool. Drain and set aside.
  • Bring salted water back to a boil and add the potatoes and bay leaf. Simmer until potatoes are firm but pierced easily with a skewer, about 25-30 minutes. Drain and discard bay leaf.
  • When potatoes have cooled off enough to handle, slice into coins and place in a large salad bowl.
  • Add the DLM Dijon Dressing and toss to coat, letting potatoes cool off completely in dressing.
  • Add the green beans and herbs. Toss well, seasoning generously with salt and pepper.

Notes

Best served chilled as a side for picnics or gatherings.
