Ingredients
  

Sauce Ingredients

  • 6 piece tomatillos husked and washed
  • 3 tablespoon chopped white onion
  • 1 clove of garlic
  • 2-3 serrano peppers if using jalapeños use 1
  • 1 tablespoon salt
  • 3 cup of water
  • ½ cup Mexican cream or sour cream
  • ½ cup chopped cilantro

Filling Ingredients

  • 2 cups fully cooked shredded chicken leftover rotisserie chicken is also ok
  • 1 cup shredded Swiss cheese or Muenster or Monterey Cheese
  • ½ medium onion thinly sliced
  • 2 tablespoon vegetable oil for frying

Instructions
 

Make your green enchilada sauce

  • Remove the papery husk from the tomatillos and wash them thoroughly. Wash the serrano peppers as well.
  • In a saucepan, bring the water to a boil.
  • Add the serrano peppers and tomatillos to boiling water for about 12 to 15 minutes.
  • Drain and reserve ¼ cup of the water from cooking.
  • In a blender, combine the peppers, tomatillos, garlic, reserved water, chopped onion, Mexican cream, and cilantro. Blend until smooth.

Prep the tortillas

  • Heat a large skillet over medium-high heat with oil. Dip the tortillas one at a time into the oil to soften.
  • Transfer onto a plate covered with paper towels to drain excess oil. Preheat oven to 350°F.

Season your chicken mixture

  • Season the chicken with salt and pepper. Optionally add garlic powder.

Assemble the enchiladas

  • Fill each tortilla with the chicken and roll it up. Arrange enchiladas seam side down in a baking dish.
  • Cover with sauce and sprinkle with cheese. Bake for 30 minutes or until cheese starts to brown.
  • Serve immediately and enjoy!

Notes

Brush tortillas with oil and warm them in a skillet for less oil use. Cooking spray can be used instead.
