(cherry tomatoes can also be used)
Fresh basil
Sourdough bread
Pane di casa, fresh or day old
Extra virgin olive oil
EVOO
Salt

Instructions
Preparation
Wash tomatoes thoroughly, then chop them into small pieces directly in a bowl.
Add a generous amount of extra virgin olive oil, salt, pepper, and one clove of crushed garlic.
Add fresh basil and mix using hands or a spoon, then leave to rest for 10-20 minutes.
Slice 2 pieces of bread per person, then choose your method of cooking.
For skillet: Heat skillet and cook bread until golden and marked, flipping to cook both sides.
For toaster: Cook slices to desired texture.
For oven: Place bread on baking paper, using grill/broiler setting.
Rub the garlic on the hot side of the bread after cooking.
Scoop juice from the tomato mixture onto each slice of bread before adding tomatoes and basil.
For cherry tomatoes, cut in half and squeeze juice onto bread.
Serve and enjoy!
Notes
Best served fresh with a drizzle of olive oil on top.
