Ingredients
  

  • 2 cloves Garlic skin removed
  • Fresh ripe tomatoes (cherry tomatoes can also be used)
  • Fresh basil
  • Sourdough bread Pane di casa, fresh or day old
  • Extra virgin olive oil EVOO
  • Salt
  • Pepper

Instructions
 

Preparation

  • Wash tomatoes thoroughly, then chop them into small pieces directly in a bowl.
  • Add a generous amount of extra virgin olive oil, salt, pepper, and one clove of crushed garlic.
  • Add fresh basil and mix using hands or a spoon, then leave to rest for 10-20 minutes.
  • Slice 2 pieces of bread per person, then choose your method of cooking.
  • For skillet: Heat skillet and cook bread until golden and marked, flipping to cook both sides.
  • For toaster: Cook slices to desired texture.
  • For oven: Place bread on baking paper, using grill/broiler setting.
  • Rub the garlic on the hot side of the bread after cooking.
  • Scoop juice from the tomato mixture onto each slice of bread before adding tomatoes and basil.
  • For cherry tomatoes, cut in half and squeeze juice onto bread.
  • Serve and enjoy!

Notes

Best served fresh with a drizzle of olive oil on top.
