Ingredients
  

  • 2 lbs carrots, peeled
  • ¼ cup olive oil
  • ¼ cup parsley, finely chopped
  • 3 tablespoon pure maple syrup
  • 2 tablespoon dijon mustard
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Preheat the oven to 400 F.
  • Cut the carrots into 1" pieces. Toss them in a bowl with the olive oil, maple syrup, dijon mustard, parsley and spices. Mix well until they're all coated.
  • Transfer them to a parchment lined sheet pan. Pour any remaining marinade over the carrots.
  • Roast for 45-50 minutes, flipping halfway through.
  • Garnish with extra parsley when ready to serve and a pinch of salt if needed.
