- 2 lbs carrots, peeled
- ¼ cup olive oil
- ¼ cup parsley, finely chopped
- 3 tablespoon pure maple syrup
- 2 tablespoon dijon mustard
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
Preheat the oven to 400 F.
Cut the carrots into 1" pieces. Toss them in a bowl with the olive oil, maple syrup, dijon mustard, parsley and spices. Mix well until they're all coated.
Transfer them to a parchment lined sheet pan. Pour any remaining marinade over the carrots.
Roast for 45-50 minutes, flipping halfway through.
Garnish with extra parsley when ready to serve and a pinch of salt if needed.
