Remoulade
- 2 tablespoons light mayonnaise
- 1 tablespoon finely chopped, drained dill pickles
- 1 tablespoon whole-grain mustard
- 2 teaspoons sriracha chili sauce
- 1 teaspoon Creole seasoning
Slaw
- ½ large DOLE® Green or Red Apple, finely chopped
- 1 cup chopped green and/or red cabbage
- ¼ cup peeled and finely chopped DOLE® Mango
- 2 tablespoons finely chopped DOLE® Red Onion
- 1 tablespoon thinly sliced DOLE® Green Onion
- ¼ teaspoon salt
- ½ teaspoon ground black pepper
Sausage and Rolls
- 1 tablespoon olive oil
- 4 fully cooked jalapeño chicken sausages, sliced crosswise
- 4 whole grain and seeds sandwich rolls
Preparation
Stir mayonnaise, pickles, mustard, sriracha and seasoning in a small bowl. Makes about ¼ cup remoulade.
Toss apple, cabbage, mango, red onion, green onion, salt and pepper in a medium bowl. Makes about 2 cups slaw.
Heat oil in a large skillet over medium-high heat. Add sausages; cook 5 minutes or until browned, stirring occasionally. Transfer sausages to a paper towel-lined plate. Makes about 2 cups sausage.
Fill rolls with sausage and slaw; drizzle with remoulade and cut crosswise in half. Makes 4 Po' Boys.
