Ingredients
  

Remoulade

  • 2 tablespoons light mayonnaise
  • 1 tablespoon finely chopped, drained dill pickles
  • 1 tablespoon whole-grain mustard
  • 2 teaspoons sriracha chili sauce
  • 1 teaspoon Creole seasoning

Slaw

  • ½ large DOLE® Green or Red Apple, finely chopped
  • 1 cup chopped green and/or red cabbage
  • ¼ cup peeled and finely chopped DOLE® Mango
  • 2 tablespoons finely chopped DOLE® Red Onion
  • 1 tablespoon thinly sliced DOLE® Green Onion
  • ¼ teaspoon salt
  • ½ teaspoon ground black pepper

Sausage and Rolls

  • 1 tablespoon olive oil
  • 4 fully cooked jalapeño chicken sausages, sliced crosswise
  • 4 whole grain and seeds sandwich rolls

Instructions
 

Preparation

  • Stir mayonnaise, pickles, mustard, sriracha and seasoning in a small bowl. Makes about ¼ cup remoulade.
  • Toss apple, cabbage, mango, red onion, green onion, salt and pepper in a medium bowl. Makes about 2 cups slaw.
  • Heat oil in a large skillet over medium-high heat. Add sausages; cook 5 minutes or until browned, stirring occasionally. Transfer sausages to a paper towel-lined plate. Makes about 2 cups sausage.
  • Fill rolls with sausage and slaw; drizzle with remoulade and cut crosswise in half. Makes 4 Po' Boys.
