Mocha Banana Bread

Ingredients
  

For the Loaf

  • 1 tablespoon ground chia or flaxseed
  • 3 tablespoon water
  • 3 large ripe bananas (300g)
  • 70 g coconut sugar
  • 80 ml maple syrup
  • 60 g thick coconut yoghurt
  • 60 ml coconut oil melted
  • 60 g smooth tahini runny
  • 1 tablespoon coffee powder
  • 105 g plain or gluten-free flour
  • 50 g cocoa powder
  • 25 g vegan chocolate protein powder
  • 2 tablespoon baking powder

Add-Ins

  • 60 g dark chocolate chopped

For the Frosting

  • 200 g thick coconut yoghurt
  • 30 g vegan chocolate protein powder
  • 1 tablespoon brewed coffee cooled
  • chocolate coffee beans

Instructions
 

Preparation

  • Preheat the oven to 160Fan/180ºC and line a 9x5-inch loaf tin with parchment paper.
  • Stir the chia/flaxseed and water to form a gel and leave for 2-3 minutes.
  • Mash the bananas well and add to a mixing bowl. Whisk in the chia/flaxseed gel, sugar, syrup, yoghurt, coconut oil, tahini, and coffee powder until smooth. Sift in the flour, cocoa powder, chocolate protein powder, and baking powder. Add the salt and whisk to a smooth, thick batter. Fold in the chocolate.

Baking

  • Pour the batter into the lined tin and smooth over the top. Bake for 50 minutes, until an inserted skewer comes out mainly clean from the center of the loaf.
  • Cool for 10 minutes in the tin and then lift out to cool fully on a wire rack.

Frosting

  • Whisk together the yoghurt, protein powder, and coffee until smooth and thick.
  • Smooth the frosting over the loaf and decorate with chocolate coffee beans.
  • Slice and enjoy straight away or keep in a sealed container in the fridge for 3-5 days or freeze, without the frosting, for 1 month, wrapped well.
