Ingredients
  

Vegetables and Base

  • 250 g cabbage, finely chopped
  • 200 g carrots, grated
  • 1 scallion, chopped green parts sliced, white parts chopped
  • 100 g flour
  • 1 teaspoon baking powder
  • 150 g quark low fat
  • 3 eggs
  • 1 teaspoon salt
  • 0.5-1 teaspoon curry powder
  • cream for frying

Sauce

  • 150 g quark low fat
  • 0.5 lemon, juiced
  • 0.5 teaspoon mustard
  • 1 teaspoon mint or chives, finely chopped
  • 1 teaspoon curry
  • 0.5 teaspoon salt
  • pepper

Instructions
 

Preparation

  • Mix the cabbage, carrots, scallion, flour, baking powder, quark, eggs, and spices.
  • Heat the cream for frying in a large pan. Depending on the size, pour all or half of the mixture into the pan, spreading it evenly. Cook for 5 minutes over medium heat. Flip using a plate. Finish cooking for another 3-5 minutes on the second side.
  • For the quark sauce: mix all ingredients and adjust seasoning. Serve with the pancake.

Notes

Traditionally serves as a customizable dish, you can make smaller pancakes instead of one large one.
