Original Sausage Balls are a delicious appetizer made with Bisquick, cheddar cheese, and pork sausage, ideal for parties and breakfast.

Equipment

Ingredients
  

  • 3 cups Bisquick baking mix scant
  • 1 pound pork sausage at room temperature (I use 'hot')
  • 16 ounces sharp cheddar cheese shredded (4 cups)
  • ¼ cup chopped fresh chives or parsley optional

Instructions
 

  • Combine all ingredients in a stand mixer then mix at low speed using the paddle attachment (or mix by hand) until all ingredients are evenly combined.
  • Roll dough into 1 ½ inch balls and place on a baking sheet one inch apart.
  • Bake at 350 degrees for 20-25 minutes or until lightly browned on the bottom.

Notes

This recipe has garnered many comments regarding 2 vs. 3 cups of Bisquick; I use three scant cups. The uncooked dough is very hard to stir, so use a stand-mixer or wooden spoon. Definitely shred your own cheese for moisture. Avoid using the measuring cup to scoop Bisquick mix.
