Red Rice with Steak and Queso

Main Ingredients
- 2 cups Basmati rice washed
- 2.5 cups chicken broth
- 1 teaspoon chicken bouillon
- 1 14 oz can crushed tomatoes
- 3 cloves garlic minced
- 1 TBS olive oil
- 1 yellow onion diced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 3 cups thinly sliced, cooked steak
- 1 jar queso blanco warmed through
- Chopped cilantro for topping
Preparation Steps
In a large, deep skillet heat oil over medium-high heat. Add onion and saute until translucent, about 4-5 minutes. Stir in garlic and cook for another minute.
Add rice and toast for 1 minute. Stir in chili powder and cumin and continue stirring, toasting for another minute.
Stir in chicken broth, chicken bouillon powder, and crushed tomatoes. Bring to a boil, then reduce heat to a simmer. Cover and cook, stirring occasionally, for 20-25 minutes or until rice is tender and no liquid remains.
Fluff rice with a fork then plate. Top each serving with some slices of steak and a drizzle of queso. Top with chopped cilantro, if desired.
