Ingredients
  

Spices

  • 2 teaspoon ground cinnamon
  • 2 teaspoon ground curry powder
  • 2 teaspoon ground ginger or 1 tablespoon freshly grated ginger
  • 2 teaspoon garam masala
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 tablespoon oil
  • 1 large sweet onion, chopped
  • 4 tablespoon butter
  • 1.5 teaspoon salt adjust the amount to taste

Chicken and Sauce

  • 2-3 lbs chicken thighs, skinless and boneless may opt to use bone-in or half chicken thighs and chicken breasts
  • 0.75 cup tomato sauce
  • 0.25 cup water or chicken broth
  • 0.75 cup heavy cream increase to 1 cup for creamier texture
  • 1 tablespoon brown sugar
  • 1.5 tablespoon freshly squeezed lemon juice
  • cilantro, chopped for garnish optional

Preparation Steps

  • Mix all the listed spices in one bowl to make it easier to add it all in one go.
  • In a wok or skillet, heat the oil to medium-high. Sauté chopped onion for 3-4 minutes until softened. Add butter, salt, and spices, and stir until aromatic.
  • Add cubed chicken and stir to coat with spices, then transfer to the slow cooker. Pour over tomato sauce and chicken broth or water. Cook on high for 4 hours or low for 6 hours.
  • Once chicken is tender, add heavy cream, sugar, and lemon juice. Stir and continue to cook until heated through. Adjust seasoning if necessary. Garnish with chopped cilantro and serve with rice.

Notes

If using 2 pounds of chicken, start with a tablespoon of lemon juice and adjust to taste. To make it spicier, add sliced Fresno red peppers or Thai red chilies with the cream. This dish can be made ahead and tastes better the next day.
