Ingredients
  

Vegetables

  • 4 pounds potatoes, peeled & diced 2 kilos
  • 1 onion minced 1 full cup
  • 8 cups fresh spinach leaves 8 ounces (240 grams)

Dairy

  • 7 ounces sour cream 200 grams
  • 8 ounces cheddar cheese 240 grams

Condiments and Spices

  • 2 tablespoons oil olive oil or normal cooking oil
  • ½ teaspoon salt additional salt used while boiling
  • ¼ teaspoon black pepper or less
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 4 cloves garlic minced

Instructions
 

Cooking Instructions

  • Preheat oven to 400° Fahrenheit (200° Celsius).
  • Transfer peeled and diced potatoes into a pot and pour water in to fully submerge them. Add salt and bring to a boil. Simmer until almost done.
  • Heat oil in a large frying pan and add onion. Sauté until translucent, about 4 minutes. Add spinach in stages until wilted, then stir in garlic until aromatic.
  • Mix sour cream, salt, pepper, oregano, and garlic powder until smooth, then combine with drained potatoes and spinach.
  • Pour mixture into an oven-proof dish and cover with grated cheese. Bake until cheese is golden and potatoes are soft, about 25 minutes.

Notes

You can prepare the potatoes the night before to save time. The prep time may take longer than 10 minutes, but most is done while potatoes are cooking.
