- 2 tablespoons butter
- 4 cups sliced yellow squash
- 1 medium onion, chopped
- 2 large eggs
- 1 cup grated cheddar cheese
- 1 cup milk
- 2 tablespoons butter for melting
- ¼ teaspoon cayenne pepper optional
- ½ teaspoon kosher salt
- ½ teaspoon ground black pepper
- 1 sleeve Ritz crackers crushed
Preheat oven to 350º F.
Melt 2 tablespoons butter in medium skillet over medium-low heat. Add squash and onions and cook until tender.
In a large bowl, add eggs and lightly whisk. Add cheese and milk, whisk until well combined. Stir in cooked squash and onions. Melt remaining 2 tablespoons butter in skillet, add to mixture along with cayenne pepper, salt, and black pepper. Stir well to combine.
Spray a 9x13 casserole dish with cooking spray and pour squash mixture into the baking dish. Top evenly with crushed Ritz crackers. Bake for 45 minutes until the top is lightly browned.
Allow to sit for about 3 minutes before serving.
