Ingredients
  

  • ½ cup butter, softened dairy-free or regular
  • cup granulated sugar
  • cup brown sugar
  • 1 large egg
  • ½ cup tahini preferably runny
  • 1 teaspoon vanilla
  • 1 ¼ cups all-purpose flour spooned and leveled
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups dark chocolate chips plus extra for topping, if desired

Instructions
 

  • Add the butter, granulated sugar, and brown sugar to a mixing bowl or bowl of a stand mixer.
  • Mix together for 1 minute.
  • Add in the egg, tahini, and vanilla and beat together for an additional 30 seconds.
  • Add in the remaining ingredients aside from the chocolate chips, making sure to spoon and level the flour.
  • Fold in the chocolate chips.
  • Scoop the dough using a 2-tablespoon scoop and place it on a baking sheet lined with parchment paper, leaving enough space in between for spreading. Top each cookie with additional chocolate if desired.
  • Place in the fridge to chill for 30 minutes.
  • Preheat the oven to 350 degrees Fahrenheit.
  • Once the dough has chilled, bake for 13-17 minutes or until the edges are golden brown.
  • Let cool on the baking sheet for 15 minutes, then transfer to a wire rack to finish cooling.
  • Sprinkle with flaky salt if desired and enjoy!

Notes

Make sure the butter is softened at room temperature for best results. Chill the dough for 30 minutes for the best texture once cooked. Adjust baking time for softer or firmer cookies.
